Why Gluten-Free?
Gluten Free doesn't mean boring. Gluten Free means a chance to heal your system from the inside out. My life changed when I was diagnosed with Celiac disease in 2019. Celiac disease (gluten intolerant disease) is an autoimmune disease that occurs where the ingestion of gluten leads to damage in the small intestine. It is estimated to affect 1 in 100 people worldwide, but only about 30% are properly diagnosed. Upon this diagnoses I made it my mission to heal myself and help others do the same. Being able to prepare meals for my clients knowing that they will receive all the benefits from eating gluten free makes me feel empowered as a Chef. Many people report digestive symptom improvement within a few days of dropping gluten!! Fatigue and brain fog often start getting better in the first week along with improved mood and sleep, reduced inflammation, better nutrient absorption, weight loss and more.
